KABSA (Arabic meal)
Ingredients
2 cups Basmati rice
½ kilo chicken thighs
1 big onion (chopped)
1 small garlic (minced)
1 small carrots (shredded)
Mixed Spices (lime, cardamoms seeds, cinnamon stick, bay leaves – all dried, small size only)
Kabsa powder
Procedure
1. Ibabad ang rice for 30 minutes
2. Igisa ang sibuyas
3. Isunod ang chicken
4. Isunod ang bawang at carrots
5. Lagyan ng 3 cups of water (estimate only)
6. Ilagay lahat ng spices. (dried spices + 2 teaspoon kabsa powder)
7. Medyo lutuin ang manok (almost cook)
8. Pagkulo, ilagay ang basmati rice
9. Lutuin sa low to mid heat.
10. Alagaan sa halo hanggang maluto.
11. Kung kinakailangan ay dagdagan ng hot water paunti-unti.
*Note: pang garnish ay aragula leaves at toppings ang grilled chicken na niluto separately = optional only itong dalawa na ito.

2. Sauté the onion
3. Add chicken thighs
4. Add the garlic, carrots
5. Put 3 cups of water (estimate only)
6. Add all spices (dried spies + 2 teaspoon kabsa powder)
7. Let the chicken cook almost done
8. Put the basmati rice
9. Cook in low to mid heat
10. Stir from time to time
11. Add hot water if needed
12. Lastly, just eat right.
