In my desire to reminisce my father’s recipe’,
I’ve come up with this old dish that my family cook in rare occasions – the chicken
in pickles. Back then it was
special. Cooked in pickles, we do not
missed this dish in every fiesta, although as kids we used to snob it during
that time but now I can appreciate the distinctive taste of this recipe’.
Preparing is simple and easy. You will need the following:
1 kg of chicken thigh,
remove the skin
Relished pickles
Glove of garlic
Medium size onion
3 pieces potatoes
medium size
Procedure in cooking: Sauté the crushed and chopped garlic and
onion cut into halves and quartered one after the other then mix the chicken
cut into bite sizes and bay leaf. Let them simmer for two minutes. Add the relished pickles and let it boil for
at least three minutes to absorb the pickles distinctive taste into meat, stir occasionally. Add half cup of water and the potato cut into
quartered and simmer them until cooked. An
option lastly is red bell pepper sliced thinly to add in aroma and presentation
can put on top.
And
lastly, just eat right.
