FLYING IN BUSINESS CLASS

For a change I stepped up one of my flights via Philippine Airlines and it was my first time to book in a significantly expensive business class flight. For once, I would like to experience to fly with a real "very important person treatment". My VIP experience started in the check-in counter when I had the priority check-in amidst of the long queue. It was comfortable without long waiting my turn to off load my luggage. The boarding time was opened at 6:20 PM but I availed my perk to embark on the plane on my preferred time. I passed through a separate entry going to my seat, a friendly cabin crew welcomed me and brought me to the assigned seat for me. A fairly small but cozy and spacious area appeared before me, few seats but comfortable and bigger angled seats with more legroom. Though I was not in my favorite spot via window seat, but I really liked the single seat with aisles on both sides and I felt the privacy on the layout of each seat. I was able to stretch my legs, my feet were wearing soft slippers, and I inclined my seat into bed for a while. A small onboard blue flight amenity kit pouch bag was handed out to the passengers, I did not open mine. Though I did not need the available head set for free, from the beginning I already felt the extra care treatment.


When the cabin crew advised me that the dinner and breafast will be served during the course of 9-hour flight, I took the chance to make food review for an in-flight meals. The first serving was the appetizer at around 1 hour after take-off. For my appetizer  I went with Tabbouleh and hummus with lime, lettuce, vine leaves, thinly sliced tomatoes, and mixed nuts on the side. As usual I opted with the fresh orange juice. The flight was from Middle East origin so an Arabian set-up like this was a nice starter. I'd tasted that pungent bitter from crushed parsley and peppery mint in Tabbouleh. Their strong taste is perfect with tangy taste of creamy hummus squeezed with lime. The cheakpeas of hummus balanced the potent tastes. The blanched vine leaves are just ideal to mix with fresh and crunchy lettuce and tomatoes. I cannot say special on it because I am not familiar what are in Middle Eastern foods.


It was a multicourse jeal, the dinner main course was served next. Chicken, beef, and fish were the choices, I chose Beef Roulade for my main course. It was served with asparagus, carrots and potato wedges. I am not a fan of beef but I must say I liked the roasted beef was tenderly done. The sweet-spicy brown souce added a dramatic taste in every spoonful. The asparagus, potato and carrots were saute'ed in olive oil seasoned with peppermint and salt, they were crunchy and good to go their switness with that juicy roasted beef. Honestly I like the meal, though I did not take a shot of wine, it was indeed a nice dinner in the sky.


The breakfast was served after about six hour onboard. For breakfast, I chose omelet. It was served with roasted muchroom, potato and tomatoes. On the side were banana crepe rolls, fruits, and honey. I didn't really like much the omelet; it was kind of moist I think the cheese made it. And I did not eat the mashed banana and mango in yogurt because I don't like the sour savor taste of a fermented milk. But the crepes and fruits salad with sugar syrup were remarkable for me. And yes, a black coffee was next, perfect to balance all those aftertastes and feel relax while enjoying Mabuhay magazine aboard while resting my feet in a spacious leg room  and will touch down in few hours more.


I had the time to open the emenity kit at home. There were two toiletries, moisturizer, a comb with brush, toothbrush and toothpaste, sleeping mask, and sock. All in all, I am pleased with PAL treatment experience and as well as their onboard menu. It was simple, light, and balance, and I am simply basic anyway. The perks of flying business class with Philippine Airlines, defenitely it was a pleasant long nine-hour flight. I wish I could fly once more to take again the edge of a pleasant journey.

COFFEE IS LIFE

Always misunderstood, coffee has a bad reputation as not good drink because of caffeine, which is the first thing that always comes to our mind just when hearing about it or thinking of it. But supprisingly, coffee with the right amount is actually good. What makes it bad is if you add sugar or creamer. Coffee contains antioxidants. And wait, there are more that you cannot think of what you can get from coffee that are linked to several health benefits.


Coffee is good for health of our heart, liver and brain. Coffee drinkers are less likely to suffer a stroke. A cup or two a day may support the weak heart to pump enough blood to our body. Our liver condition can be protected thru getting liver enzyme levels from coffee. Our blood sugar level is regulated from the produced insulin and processed glucose that will help lowering the risk of type-2 diabetes. And our cells, coffee reduces fissures in our DNA strands thus make it stronger and repaired our cells.


In terms of diseases, coffee drinkers are less likely get colon cancer, kidney disease, and heart disease. The caffeine, a central nervous system stimulant that keeps our adrenalin rush makes our brain active and it is good for our brain because it gives us significant protection agaisnt risk of Alzhiemer's disease. Similarly, caffeine is linked to less likely develop Parkinson's disease. Coffee has active substance that may reduce internal inflamation and protect against disease.


It serves as energizer. Coffee boosts our energy levels. From the early morning we wake up when we want to get lively to start the day with that cup of coffee up to late night we need to counter the sleepy mood while catching up some stuff before we end the day, coffee does its job. In fact, coffee may enhance an athletic performance, that's how coffee heightens our energy level. And did you know that coffee contributes to a lower risk of depression?


"But first, coffee" - it is how you start your day. Life starts after coffee, it kickstarts our morning. With these good things about the good sides of coffee, overall drinking coffee in moderation like three or four cups a day could increases longevity and is considered safe in general. But take note it is not for all because those who have unmanaged blood pressure need to control their coffee. As disclaimer, this is merely for information purposes only and should not substitute any medical tratment.


Let me end this with these three notable quotes that feel good to ponder. "Coffee is God's gift to mankind" quoted by Ralph Waldo Emerson. Fran Drescher said "Once you wake up and smell the coffee, it is hard to go back to sleep". And "But even a bad cup of coffee is better than no coffee at all" by David Lynch.


I am not a coffee person but I do really appreciate having a cup of dark and strong coffee every morning especially like before starting the works. I like the comfort it gives when the temperature is freezing during winter, or when there is rain with thunder and cold wind, or when I am in high land places. I love its companionship whenever I am in travel both in-flight or waiting in bus terminals. Also a cup of coffee while camping specially during break of the dawn is a serene feeling that is for keep.

HOW I MADE MY SIMPLE FRUITCAKE?


 

SIMPLE INGREDIENTS:

Powder:

2 cups flour

1/2 cup mascuvado sugar

2 teaspoons baking powder

1 teaspoon salt

 

Liquid:

1/2 cup juice or brandy/rum

2 teaspoons vanilla essence(optional)

1 cup melted butter

6 beaten egg

1/2 cup water (back-up)

1 cup sugar for caramel syrup (optional)

 

Solid:

1/2 cup raisins
1/2 cup walnuts, chopped
1/2 cup candied pineapple chunks
1/2 cup red and green maraschino cherries (seasonal)

 

SIMPLE PROCEDURES:

Soak the dried fruits overnight

Mix all powder, then set aside

Mix all liquid, then add all solid ingredients (keep 1/3 of soaked dried fruits for toppings)

Combine the mixed powder and mixed liquid/solid

Pre-heat the oven at 300 degrees F.

Grease the mould

Pour the mould with mixtures

Bake for first 20 minutes

Top the remaining soaked dried fruits and bake for another 40 minutes

Lastly, just eat right

 Paraan:

1. Ibabad ang manok sa toyo, bawang at paminta sa loob ng 3 oras o magdamag

2. Igisa ang bawang at sibuyas, lagyan ng pamintang durog

3. Ilagay ang manok at igisa nang sandal

4. Lagyan ng toyo, pamintang buo at dahon ng laurel

5. Pakuluan nang sandali

6. Ilagay ang pineapple juice at asukal na pula

7. Pakuluan nang sandali

8. Ilagay ang tauwi at bulaklak ng puso ng saging

9. Pakuluan hanggang sa kumaunti ang sarsa

10.At pang-huli, just eat right

Paraan

1. Sa kaunting tubig, ilagay ang pinitpit na bawang at hinati sa apat na sibuyas - para makabawas ng lansa.

2. Lagyan ng bagoong-isda. Tatl
ong kutsara.

3. Pakuluan upang mawala ang lansa at maluto ang bagoong.

4. Ilagay ang mga matitigas na gulay: kalabasa, ampalaya, sitaw, okra at talong.

5. Pakuluin hanggang halos maluto ang mga gulay.

6. Ilagay ang mga dahon ng gulay: saluyot, alukbati, dahon ng malungay, etc.

7. Pakuluan ng sandal hanggang maluto

PAGLULUTO NG SINIGANG

Ang Sinigang ay nagmula sa Katalugan at naging popular sa buong Pilipinas na maituturi na isa sa pambansang ulam sa bansa.  Ito ay isang sinabawang karne na pinaasim at nilahukan ng ibat-ibang gulay.  Kadalasan ay ginagamitan ito ng sampalok bilang panuka upang maging maasim ang sabaw ngunit maaari rin gamitin ang hilaw na mangga, bayabas, santol, kamyas, kalamansi, guyabano, balimbing at kamatis.  Ang mga gulay na isinasahog dito ay kadalasang nasa tabi-tabi lamang tulad ng kamatis, sibuyas, talong, okra, labanos, talbos ng kamote o kangkong, mustasa, letsugas, sigarilyas, sitaw, gabi, siling haba, atbp.  Maaaring isigang ang karne ng baboy, baka, manok, hipon, isda tulad ng bangus, kanduli at ayungin, at kahit ang ilang seafoods tulad ng alimasag.

Nasa edad trese ako nang matutunan kong lutuin ang Sinigang, na natutunan ko sa aking ama at ito ang naging paborito kong ulam.  Ito rin ang ulam na masasabi kong pinakamasarap na kaya kong lutuin.  Sa kaserola ay sabay kong pakukuluan ang karne ng baboy at ang sariwang sampalok.  Kukunin ko ang sampalok kapag ito ay malambot na at sa pinagkuluan ay hinahayaan ko itong kumulo upang lumambot ang karne ng baboy.  Sa paunti-unting tubig ay kailangang pisain ko nang mabuti ang sampalok upang pumuti ang sabaw ng sinigang.  Ibubuhos ko ang pinagkatasan ng sampalok kapag ang karne ay halos malapit na sa lambot na gusto kong mangyari.  Ilalagay ko ang sili at labanos, kasunod ay ang sitaw at kamatis.  Kung minsan ay inuuna ko ang kamatis kung gusto kong madurog ito at ang sili na rin kung gusto kong ito ay maanghang.  Kapag ang karne ng baboy ay malambot na, iyung humihiwalay na ang taba (na mala-gelatin sa lambot) sa laman ay titimplahan ko ito ng patis at saka ko ilalagay ang talbos ng kamote, tatakpan ito at isasara ang kalan.  Hindi pa ako gumamit nuon ng gabi upang lumapot ang sabaw ng sinigang pero sapat na ang mga sangkap na ginamit ko para makumpleto ko ang resipe ng aking Sinigang.  May sawsawang patis na pinisaan ng sili at sa malamig na kanin ay isasabaw ang sinigang, duon ako nakakarami ng pagkain.

Ang pagluluto ng Sinigang ay depende sa lugar at depende sa karne ngunit ang lasa nila ay nagkakalapit sa pagkakakilanlang lasa ng Sinigang.  Pinangat na Isda sa Katimugang Luzon, Linarang ang tawag sa Cebu, Sinanglaw (na mayroong Ampalaya) sa Ilokos samantalang mayroong Bule Baluga sa Pampanga ang mga Aeta.  Bukod sa pangunahing sangkap na kamatis, subuyas, sili at panuka, mas masarap ilahok ang mustasa kaysa sa talbos ng kamote o kangkong kung ang lulutuin mo ay isda o hipon.  Masarap sa sinigang na hipon kung mayroong talong, samantalang sa baka ay mas simple sa labanos, sitaw, okra at letsugas sa halip na talbos o kangkong.  Mas masarap sa Sinigang na isda kung mayroong misu at mas masarap ang bangus at alimasag kung sinigang sa bayabas.

Mayroong tinatawag na panigang sa aming bayan sa Angono.  Ito ay ang hapunan sa bahay ng isang kaibigan (puwede rin tanghalian) na ang ulam ay Sinigang.  Mas masaya kung sisimulan ang pagsasama-sama mula sa pagluluto ng Sinigang at kanin kaysa magdadatingan ang lahat sa oras ng kainan lamang.  Kadalasan ay buto-buto ng baka o baboy ang ginagamit na karne at masayang pinagsasaluhan ang pagkain sa isang papag, kung minsan ay maaaring pagsaluhan sa inilatag na dahon ng saging upang duon kamayan na magsalo-salo ng pagkain.  Tuwing araw ng Biyernes, Sabado at Linggo kadalasan itong ginagawa dahil nagiging mas matagal ang pagsasama-sama habang nagpapanigang sa mga ganuong araw.

Ang sinigang ay isang pagkain na napaka-Filipino dahil isa itong mapagkakilanlan na matatagpuan sa isang Pilipino.  Hindi katulad ng mga pagkaing minana o ginaya natin sa ibang bansa na madalas nating lutuin tulad ng Ramen ng Tsina, Mechado ng Espanya at Steak ng Amerika, ang Sinigang ay mahirap matatagpuan sa ibang bansa na nagluluto ng mayroon ganitong mga rekado at lasa.  Bagamat maaari itong magustuhan ng mga banyaga ngunit ang Sinigang ay madalas na ihinahain sa hapag-kainan sa Pilipinas at mga lugar na mayroong komunidad ng mga Pilipino, kaya maituturi itong isang pagkain na napaka-Pinoy.

MENU EXPRESS: DISH

BBQ




Marinade:

¼ cup lemon/kalamansi

½ Soy sauce or enough to cover the meat

1 cup soda

Pepper

½ Borwn sugar

Salt to taste

Garlic

 

Basting:

Oil

1 cup catsup

Soy sauce

2 tsbp brown sugar

 

1. Marinate the chicken overnight or 4 – 6 hours

2. Roast the chicken

3. Flip the other side, apply basting on top

4. Flip the other side, apply basting on top – repeat until cooked.

Alimasag – Buttered Garlic Crab


Butter

Lots of Garlic

Onion

2 – 3 tbsp Paprika

Pepper

Chili (optional)

Salt to taste

Soda

 

1. Melt the butter

2. Sauté the garlic and onion

3. Add paprika, pepper and chili (optional)

4. Add the crab cut into half

5. Put some soda and bring to boil

6. Simmer for 8 minutes

7. When the crabs is cook, remove them

8. Let the liquids reduce

9. And lastly, just eat right.

SiSiG


½ kilo Chicken breast

1 cup mayonnaise

½ cup soy sauce

Butter

Onion

Chili

 

1. In a bowl, mix the soy sauce and mayonnaise – set aside

2. Fry the chicken breast, then cut into bite size

3. Melt the butter

4. Sauté garlic

5. Add the chili

6. Add the chicken

7. Add the mixture of soy sauce and mayonnaise

8. And lastly, just eat right.

Aglio e Olio (Garlic & Oil)


 

Spaghetti pasta

Lots of garlic

Olive oil

Basil leaves (optional: parsley)

 

1. Cook the pasta according to label instruction

(Tip: do not add oil, do not rinse, and keep some of boiled water)

2. Heat the pan and put some olive oil

3. Sauté the garlic until golden brown

4. Add the cooked paste and toss

5. Put some basil leaves

6. And lastly, just eat right.

Cacio e Pepe (Cheese & Pepper)



Whole black pepper

Cheese

Spaghetti Pasta


1. Cook the pasta according to labe instruction

2. Crack the whole black pepper

3. In a pan, roast the cracked black pepper

4. Slowly add the cheese, mix until melt

5. You may add little water from cooked pasta

6. Arrange the pasta in plate

7. Topping with the mixture of pepper and cheese

8 And lastly, just eat right

Kimchi Fried Rice

 


Kimchi

Gonchujang Paste

Soy sauce

Cooked rice

Sidings (options: Luncheon meat, spam, lumpiang shanghai, hotdog, etc)

Egg

Sesame seeds

Leaks, onion leaves

 

1. Cook the sidings and set aside

2. Fry the eggs and set aside (tips: cook in low heat to roast the side but not the whole egg)

3. Put the kimchi in a cup and chop the big cuts of cabbage (Do not use chopping board to save the sauce of kimchi)

4. Hit the pan and put some oil (used oil from egg and sidings)

5. Put the kimhi

6. Put the onion leaves

7. Add some Gonchunjang paste

8. Add some soy sause

9. Add the cooked rice

10. And lastly, just eat right.

 

Plating:

Put the fried kimchi rice in a plate.

Top with the sidings and egg

Sprinkle with sesame seeds and some leaks.

You may put some oil on top.

5.Lagyan ng tinunaw na corn starch

6.Pakuluan hanggang lumapot ang sarsa

7.Lastly, just eat right

SINIGANG NA MANOK (Chicken in Sour Broth)

I told to myself if ever I made vlog about cooking, I want it first to be my best recipe and what is better than doing what you can do best by doing what you know.  So I chose to cook my favorite:  Sinigang.  It is  Filipino dish in sour soup, can be from tamarind, guava, green mango, cotton fruits, bilimbi, and sometimes soursop, with lots of vegetables such as string beans, radish, lady's finger, eggplant, swamp cabbage, tomatoe, taro, and chili, sometimes with winged beans.  Sinigang can be beef, pork, fish, shrimp and chicken.  Although chicken is unpopular Sinigang because chicken is best for Tinola or Nilaga (stewed) but we have this dish called Sinampalukang Manok which is cooked with young leaves of tamarind and the vegetables are almost the same, so it makes sense to cook Sinigang na Manok.  My father's cooking inspired me and Sinigang na Baboy (portk) is my first expertise.

Here is the basic recipe of Sinigang (using Chicken as the main meat)
Chicken thighs
Tomato
Radish
Lady's finger
String beans
Water spinach
Chili
Sour savory (using in this video is the ready to use tamarind extract)

Procedure:
1.Bring to boil the chicken 
2.Put the tomato and chili
3.Next are the radish,string beans and lady's fingers.
4.Pour the sour savory.
4.Add some fish sauce.
5.Let it boil for few minutes.
6.Put the water spinach, covert it and turn off the heat.
7.And lastly, just eat right.

PESTO PASTA


This is a special version of my Pesto pasta to make a friend pleased.  Aside with the simple ingredients of it, I wanted to set apart from the plain pesto pasta.  We know the distinct and tang taste of pesto paste because of the crushed basil leaves.  Well, the feta cheese actually blended well with the pesto taste and with aragula leaves.  And the cherry tomatoes really go well to balance that tang taste of pesto.

I added bite size chicken breast and topped with diced onions and parmesan cheese.

The preparation is so easy.  Sauté the garlic and onion, then add the chicken breast with few water to cook.  Add the pesto paste and set aside. Cook the pasta based on the packaging instruction.  In a bowl, toss the cooked pasta and the pesto paste.  Add the aragula leaves and halves cherry tomatoes, mix well and add the feta cheese.  Sprinkle with diced onion and parmesan cheese on top.


And lastly, just eat right.

Spaghetti pasta

Pesto paste

Cherry tomatoes

Aragula leaves

Feta cheese

Parmesan cheese

Chicken breast

Onion

Garlic


If you want to do it yourself Pesto paste, get fresh basil leaves, put olive oil and some salt and pepper then crush them (manual or using blender).

MUKBANG, JOLLIBEE FOODS

This mukbang is made to show my appreciation to my favorite Philippine's fastfood: Jollibee.
While I am eating their famous menu, I shared my true-to-lif Jollibee stories through a question and answer.

1.  Why do you like Jollibee?

I like Jollibee because it’s very Filipino, very friendly, very simple – pang masa ba.  I also eat to its rivals, but, it is really different feeling if it is Jollibee.

2.  What is your most favorite Jollibee?

Definitely, spaghetti is my all-time favorite jolibee.  The thick and the signature sweet sauce style, with ham, sausage, and ground beef topped with cheddar cheese.  Actually on my taste, nagbago na siya compare before.  I would say mas gusto ko dati, do you agree ba?  But still I love it now.  And yeah…. I love it.

3.  What is your first experience with Jollibee?

You know, I was just able to go to Jollibee when I was already working. During collage, my allowance was limited only. Then when I first went to Jollibee…, I was a bit tense saying my order, kasi I don’t know how to order eh or how to say the name of the foods.

4.  Do you have unique Jollibee experience?

Yes, when I was interviewed.  When I was working in Ortigas Center, every salary, I always treat myself to Jollibee (Manuella Branch).  The Branch Manager asked me why I prefer Jollibee. I am not a talkie person so I’m pretty sure my answers are not good. I said I like their spag.

5.  What is your fondest memory with Jollibee?

Everytime I order take out for my mother who canot go out to experience the tastes of Jollibee? . . . . . . . .  that is a fond memory.

6.  When was your last memorable Jollibee eat?

2018 when we had our breakfast before we go for visita iglesia.   I like it because… I was with my family!   It is unusual to happen kasi we have different priorities.

7.  What is your best Jollibee experience?

I dined-in in a branch (Shaw Boulevard branch) when I saw this family of three.  The child was enjoying his meal and the parents were sharing their foods.  Looking at the parents happy for their kid, I was just touched. Kasi they will give everything for children kahit nothing left for them.  And it gave me realization that the most important thing in this world is family. 

8.  How is your Jollibee now?

I am in based in the Middle East.  Maybe I can sum it up like this. Anna baadni, fi itsal, maa Jollibee (I'm still in contact with Jollibee).  Laana baadni aakl, akli al mufadhal (Because I can still eat my favorite foods).

MUKBANG - KABSA, AN ARABIC DISH

This mukbang was made to record an important part of my life as an oversea worker in Middle East.

Kabsa is a traditional food in the middle east. In one order, you will have the rice cooked in chicken,  herbs and spices, with chicken either grilled or barbique, fresh tomato sauce and aragula leaves.  In some, they add french fries.

The traditional way of eating Kabsa is using the bare hands and usually on the floor.

It is oily.  Not ideal for everyday. And lastly just eat right.

KABSA


KABSA (Arabic meal)

Ingredients

2 cups Basmati rice

½ kilo chicken thighs

1 big onion (chopped)

1 small garlic (minced)

1 small carrots (shredded)

Mixed Spices (lime, cardamoms seeds, cinnamon stick, bay leaves – all dried, small size only)

Kabsa powder

 

Procedure

1.  Ibabad ang rice for 30 minutes

2.  Igisa ang sibuyas

3.  Isunod ang chicken

4.  Isunod ang bawang at carrots

5.  Lagyan ng 3 cups of water (estimate only)

6.  Ilagay lahat ng spices. (dried spices + 2 teaspoon kabsa powder)

7.  Medyo lutuin ang manok (almost cook)

8.  Pagkulo, ilagay ang basmati rice

9.  Lutuin sa low to mid heat.

10. Alagaan sa halo hanggang maluto.

11. Kung kinakailangan ay dagdagan ng hot water paunti-unti.

*Note: pang garnish ay aragula leaves at toppings ang grilled chicken na niluto separately = optional only itong dalawa na ito.

1.  Soak the rice for 30 minutes

2.  Sauté the onion

3.  Add chicken thighs

4.  Add the garlic, carrots

5.  Put 3 cups of water (estimate only)

6.  Add all spices (dried spies + 2 teaspoon kabsa powder)

7.  Let the chicken cook almost done

8.  Put the basmati rice

9.  Cook in low to mid heat

10. Stir from time to time

11. Add hot water if needed

12. Lastly, just eat right.
